Baileys fudge chocolate brownies

75g butter
150g Demerara sugar
40g cocoa powder
75g plain flour
1 teaspoon baking powder
Pinch of salt
2 medium eggs
1 tsp vanilla extract
3 to 4 baileys fudges pieces chopped finely

1) Preheat oven to 180c/gas 5. Melt the butter in a saucepan over a low heat. When melted add the demerara sugar and stir to blend.

2) In a bowl sift together the cocoa powder, flour, baking powder and the pinch of salt. Pour the sugar and butter mixture into the flour mixture and stir together.

3) Add the 2 eggs and vanilla extract and beat into the mixture until all combined.

4) Add the chopped pieces of baileys fudge and stir. Pour the mixture into a foil lined shallow baking tin and place in the oven for 20minutes or till set.

5) Leave to cool in tin for 5 minutes then transfer to a cooling rack. Cut brownie into desired squares.
